Produced with the same passion and attention to detail reserved for Ornellaia, Le Serre Nuove dell’Ornellaia is a real "second vin". A blend of Merlot, Cabernet Sauvignon, Cabernet Franc and Petit Verdot, which combines immediate pleasantness and taste-olfactory complexity with a proven aging potential.
In the wake of what seems to have become more and more the norm, even the winter of 2016 was characterized by an unusually warm climate with abundant rains in February. Bud break began in the last week of March. The abundance of water in the soil and the warm climate in April favored a rapid and normal vegetative development of the vines. Towards May, temperatures returned to normal values, slowing growth and favoring flowering, which took place in the last week of May, a period characterized by a dry and sunny climate, perfect for a good fruit set phase. The summer was mostly characterized by low rainfall, which caused considerable water stress towards the end of the ripening phase. Even the thunderstorms that usually accompany the month of August are missing, causing drought to characterize the first part of the harvest period. Fortunately, the temperatures, much cooler during the night, allowed the vines to recover from the heat of the day. The ripening continued regularly, giving the grapes an extraordinary phenolic potential and a balanced sugar / acidity ratio. The harvest began on August 24 with the youngest Merlot vineyards. The low rains in mid-September made it possible to complete the harvest in practically perfect conditions, with sunny but moderately warm weather and with a sufficient amount of water in the soil to prevent the vines from locking. The harvest ended on 12 October with the last Cabernet Sauvignon and Petit Verdot.
The harvest was done by hand in 15 kg crates and the bunches were selected on a double sorting table before and after destemming and subjected to soft pressing at the end. Each variety and each parcel was vinified separately. Alcoholic fermentation took place in stainless steel vats at temperatures between 26-30 ° C for two weeks, followed by maceration for about 10-15 days. The malolactic fermentation began in steel vats, and ended after the transfer to barriques (25% new and 75% second passage). The wine remained in barriques in the Ornellaia cellar at a controlled temperature for a period of about 15 months. After the first 12 months, the assembly was carried out and then reintroduced into the barriques where it spent another 3 months. The wine remains in the bottle for six months before being launched on the market.
